Thinning + Standard Sharpening
As you sharpen your knife, the geometry changes. The grind gradually becomes more obtuse and your knife doesn’t glide through food like it used to. If you’re experiencing wedging as you cut, then chances are your knife is due for a thinning. Another telling sign is in laminated steel. If the line of lamination is close to the edge, then you are also due for a thinning. For optimal cutting performance, choose this service to bring your knife skills forward again.

I have used Alton for sharpening new knives to set the standard of sharpness, repaired chips, restored neglected knives to pristine, sharp condition, spent hours thinning an unique Takagi honyaki santoku from a good to an exceptional knife. He sharpened a new Moritaka so much I kept nicking my fingers on the chin edge by barely tipping it. He does good work.
